Ingredients

  • 1 lb fresh white fish (cod, snapper, or tilapia), cooked and flaked
  • 1/4 tsp lime juice
  • 1 cup mashed potatoes
  • 1/4 cup Backyard Blendz Spicy Green Seasoning
  • 1 red onion, finely chopped
  • 1/2 Sweet pepper (bell pepper), finely chopped
  • 1 egg, beaten
  • 1/2 cup breadcrumbs
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Oil for frying (if frying)

Directions

  • Prepare the Fish Cake Mixture:
    • In a food processor or large mixing bowl, combine the flaked fish, lime juice, mashed potatoes, Backyard Blendz Spicy Green Seasoning, onion and bell pepper.
    • Add the beaten egg and breadcrumbs, paprika,  salt and black pepper.
    • Mix until the mixture is firm enough to hold its shape. If it’s too wet, add more breadcrumbs as needed.
    • Form the mixture into small patties or cakes, about the size of your palm.
  • Cooking Options:
    • Baking:
      • Preheat your oven to 375°F (190°C).
      • Place the fish cakes on a greased baking sheet or a baking sheet lined with parchment paper.
      • Bake for 20-25 minutes, flipping halfway through, until the fish cakes are golden brown and crispy on the outside.
    • Frying:
      • Heat oil in a large skillet over medium-high heat.
      • Fry the fish cakes in batches for about 3-4 minutes on each side, or until golden brown and crispy.
      • Drain on paper towels to remove excess oil.
  • Serve:
    • Serve the fish cakes hot with your favourite dipping sauce, such as a spicy aioli or a tangy tartar sauce.
    • Garnish with fresh herbs and a squeeze of lime juice if desired.
