Air Fryer Jerk Chicken Thighs with Potatoes, Tomatoes and Onion

Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 4 tsp BackYard Blendz Jerk Seasoning Medium
  • 1 lb potatoes, cut into bite-sized chunks
  • 1 medium red onion, cut into wedges
  • 1 cup cherry tomatoes, or 2 medium tomatoes cut into chunks
  • 1½ tbsp olive oil, divided
  • Freshly ground black pepper, to taste
  • Salt, only if needed
  • Fresh parsley, for garnish, optional

Method

  1. Season the chicken Pat the chicken thighs dry. Rub them with the BackYard Blendz Jerk Seasoning Medium, 1 tablespoon of olive oil and black pepper. Leave to marinate for at least 20 minutes if time allows.
  2. Prepare the vegetables In a bowl, toss the potatoes and red onion with the remaining olive oil. Season lightly with black pepper and add salt only if needed.
  3. Start the potatoes Preheat the air fryer to 190°C. Add the potatoes and onion to the basket and cook for 10 minutes, shaking once halfway through.
  4. Add the chicken Move the vegetables around to make space, then add the chicken thighs skin-side up. Air fry at 190°C for 18–22 minutes, depending on size, turning the vegetables once during cooking.
  5. Add the tomatoes Add the tomatoes during the final 6–8 minutes of cooking so they soften and lightly blister without breaking down too much.
  6. Check doneness Cook until the chicken is deeply coloured and the thickest part reaches 74°C / 165°F without touching the bone. The potatoes should be tender and golden.
  7. Rest and serve Let the chicken rest for 3–5 minutes, then serve with the potatoes, tomatoes and onion. Garnish with parsley if desired.

BackYard Blendz Chef Notes

Cut the potatoes into fairly even pieces so they cook at the same rate as the chicken finishes.

Add the tomatoes later in the cooking process. If they go in too early, they can collapse completely and make the basket contents wetter than ideal.

Bone-in, skin-on thighs give the juiciest result in the air fryer and hold up well to jerk seasoning.

Do not overcrowd the basket. If your air fryer is small, cook in two batches for better browning and more even roasting.

For a milder version, use BackYard Blendz Jerk Mild. For a hotter version, increase the Medium slightly or substitute Jerk Hell for a much stronger kick.

If you want a little extra colour on the chicken skin, brush very lightly with a touch more oil before air frying.
