The pouch recipe uses ½ cup of Hell Jerk Seasoning for 2 lb of drumsticks, which creates a very bold, heavily seasoned result. This is intentionally more intense than the general BackYard Blendz starting guideline of about 1 tablespoon per pound.
Hell is heat level 4 out of 4. If you want the same jerk profile with less heat, use Jerk Mild or Jerk Medium instead.
Marinating overnight gives the seasoning more time to work into the chicken, but 1 hour is enough when time is limited.
Keep the grill heat low to medium-low. The seasoning contains ingredients that can darken quickly over high direct heat, so slower cooking gives the chicken time to cook through without scorching.
Cooking time varies with the size of the drumsticks. Use 74°C / 165°F at the thickest part as the final doneness check.
