Ingredients

  • 8 large eggs
  • 1 teaspoon BackYard Blendz Green Seasoning (Spicy Blend if you want heat)
  • 1 small onion, finely chopped
  • 2 tablespoons butter
  • Salt to taste
  • 1/2 carrot, grated
  • 2 pimentoes

Directions

  1. Prep Ingredients: Start by chopping the onion and pimentoes finely. Grate the carrot and set aside.
  2. Beat Eggs: In a bowl, crack the eggs and add the green seasoning. Beat well until the mixture is fully combined.
  3. Cook Vegetables: Heat butter in a non-stick skillet over medium heat. Add the onion and pimentoes and carrot. Sauté for about 2-3 minutes until the vegetables are soft.
  4. Scramble Eggs: Pour the seasoned egg mixture into the skillet. Let it sit undisturbed for about 20 seconds, then gently stir with a spatula, pushing the eggs from the edges to the center.
  5. Finish Cooking: Continue to cook and stir for another 3-4 minutes until the eggs are fully cooked but still moist and slightly runny in places. Season with salt to taste.
  6. Serve: Serve hot, garnished with fresh herbs if desired. Ideal with a slice of toasted bread, cucumbers or a side of fresh fruit.
