Ingredients

  • 2 lb chicken wings or small bone-in chicken pieces
  • 2 tbsp BackYard Blendz Original Green Seasoning
  • 1 tbsp oil
  • Freshly ground black pepper, to taste
  • ½ cup barbecue sauce, plus extra for serving if desired

Method

  1. Season the chicken Pat the chicken dry. Coat evenly with BackYard Blendz Original Green Seasoning, oil and black pepper.
  2. Marinate Cover and refrigerate for at least 30 minutes. For a deeper herb flavour, marinate for several hours.
  3. Cook on the grill For grilling, cook over medium heat, turning regularly, for about 25–35 minutes depending on the size of the pieces, until nearly cooked through and well browned.
  4. Or bake in the oven For oven cooking, arrange the chicken on a lined tray and bake at 200°C / 400°F for about 30–40 minutes, turning once, until nearly cooked through.
  5. Glaze Brush the chicken generously with barbecue sauce during the final 5–10 minutes of cooking. Turn or brush again as needed so the sauce caramelises without burning.
  6. Check and rest Cook until the thickest part of the chicken reaches 74°C / 165°F, avoiding the bone when checking. Rest for about 5 minutes before serving.

BackYard Blendz Chef Notes

Use about 1 tablespoon of BackYard Blendz Original Green Seasoning per 1 lb of chicken as the starting point. Add a little more for a deeper herb flavour, or use slightly less when you want to stretch the seasoning while keeping the Caribbean herb character.

For stronger flavour, season the chicken several hours ahead and keep refrigerated until ready to cook. The marinating time is not included in the active preparation time.

Apply barbecue sauce only near the end of cooking. Most barbecue sauces contain sugar and can scorch if exposed to direct heat for too long.

Cooking time varies with the size and cut of the chicken. Use 74°C / 165°F at the thickest part as the final doneness check rather than relying only on the clock.

For a spicier version, substitute BackYard Blendz Spicy Green Seasoning for the Original.
